A Perfect Pair

In addition to delicious and exotic entrees, Greystone the Steakhouse offers a highly acclaimed wine list from their exquisite wine cellar. Josh Mortimer, Wine Director at Greystone, highlights his favorite affordable Bordeaux and the entree that pairs with it perfectly.

2010 Chateau Bernadotte from the Haut Medoc AOC (Left Bank Vinyard) & Greystone Steakhouse’s signature Buffalo Tenderloin:

  • The Chateau is named after Marshal Bernadotte one of the first appointed Sovereign Princes by Napoleon I.
  • The Vineyard was renovated in 1997 increasing the plantings of merlot to 44 percent from 36 percent. The soils are perfect for this blend.
  • Cabernet Sauvignon accounts for 50 percent of the plantings on this gravely/ sandy soil with some clay that induces the Merlot to ripen.
  • Most of the vines in this 35-hectare vineyard are at least 25 yrs. old.
  • The press is aged in 30 percent new oak for 12-18 months depending on the vintage.

The Wine comes together seamlessly, emitting pleasant Sweet black cherries, licorice, fresh brewed espresso and slow forming Crème de cassis from start to finish.

An invigorating elongated finish with just enough tannin to open your palate for Greystone The Steakhouse’s signature Buffalo Tenderloin. Served with poached pears, dried figs, Swiss chards, and a next to a elegantly silky garlic potato puree. The Buffalo is glazed a beautiful Port wine reduction with notes of fig and raisin that make this 2010 Chateau Bernadotte an excellent Bordeaux to enjoy with some exquisite game meat.
